I run a Sabre by myself and I can only load and unload 25 dz/hr MAX. That being said, I am really bad at loading shirts. I swear one of my arms is longer than the other. I cannot load a shirt straight to save my life. Luckily speed isn't the most important thing for my situation. I have a Workhorse 40" 13' dryer that I run on the lowest speed since I print waterbase and discharge. If I were printing any faster, it would bottle neck immediately.

On that note, if you plan on printing water base or discharge, get a gas dryer. If I had gas lines in my unit, I would have bought one a long time ago. Electric dryers are expensive to run and can't keep up with an auto when printing WB or DC. ESPECIALLY if you are going to have two operators.

Good luck with this new chapter in your business!
