Steve aka Sbrem had a post on here explaining how to add color to a  open font or a font that is already outlined, I can't find it, it was done in Illy.

Menu:
Type-create outlines

Window:
Pathfinder - merge

ungroup: ctrl+shift+G

select the non filled paths inside the outlines and fill with color

That's it, when you don't use that all time you forget the simple, for me that's all the time, I could have done in Photoshop but Steve showed me the light!!!!!

I originally learned that from a sign program, Flexi-Sign. It had a load of vector editing tools, I imagine the sign programs still do, though they are outputting more digitally now.
